Hi Everyone!
This little gem of a recipe made it back onto my food log today. I tried it yesterday and it was fantastic so I saved the second one for lunch, and scooped it onto my fresh spinach salad.
Many of you have been asking for the recipe so here it is! Feel free to experiment with toppings of your choice.
1. Preheat oven to 450 degrees. Cut and avocado in half and remove the pit. Use a spoon to scoop out a bit of extra avocado to make the pocket slightly larger.
2. Squeeze a bit of fresh lime (lemon works too) over the avocado. Tear spinach leaves (or veggie of choice) into smaller pieces. Top each half with one egg. Optional: Fresh cracked pepper or roasted red pepper would be delicious.
3. Top the egg with sliced cherry tomatoes. Place on a cookie sheet or baking pan. Bake for 12-16 minutes depending on how well you want the eggs to be done.
4. Remove from oven and enjoy! I ate the first one right out of the shell, and the second one over a bed of fresh spinach and Roma tomatoes.
Hi Melissa, just wanted to tell you that I’m so happy to see that you’re eating like us normal people! I really like you’re food post everything look’s good and for sure I will try it. You’re PB and greek yogurt looks sooooo good. Keep up the good work Melissa, it pushes me to continu my good eating and training with you.
I am so trying this in the morning! the avocado u used Melissa was the has ones right? It looks so delish! Did u eat both halfs then? This would be wonderful for breakfast….

I made this this morning. I put the scooped out avocado on a bed of cooked spinach. yummy! next time I will use bigger avocados to hold all the egg. 😉
Hi. Nice recipe. I wanted the “egg hole” to be bigger so I actually scooped out the avocado, mixed it lightly with chunks of tomato, onion, spinach and lime juice. Then put it back in the shells so it was “mounded” up like a deviled egg. Then I was able to squoosh a deeper hole for the egg. Works better with a less-ripe avocado, otherwise you end up with soup! Very nice idea though. Never would have thought of it!
Thanks for that extra about the avocado. Im going to try it with the less ripe one.
